- ½ English cucumber, peeled and shredded
- 1 cup nonfat plain Greek yogurt
- 1 Tbs fresh lemon juice
- 1 tsp minced garlic (1 clove)
- 1 Tbs fresh chopped dill OR 1 tsp dried dill
- ¼ tsp sea salt
- Using hands, squeeze as much water out of shredded cucumber as possible (to yield about ½ cup).
- Add cucumber to a bowl; stir in remaining ingredients.
- Serve chilled. Makes about 1½ cups.
