Tropical Salsa Chicken with Sweet Potato Fries & Cucumber Salad
- 1 tsp olive oil
- 1 tsp cumin
- ½ tsp chili powder
- squeeze of lime
- 4-oz skinless chicken breast
Combine oil, spices and lime juice; rub over chicken. Grill 5 minutes per side or till cooked through. Top with ¼ cup salsa (look for brands with 175mg of sodium or less per 2 Tbs serving) mixed with 3 Tbs finely chopped mango, sweet potato fries, and cucumber salad. Serves 1.
Cucumber Salad: Mix ¼ cup plain yogurt, ½ cup chopped cucumber, ¼ tsp dried dill, ½ Tbs lemon juice. Season with salt, pepper and minced garlic to taste. Serves 1.
