Curried Cauliflower Bites
Yum! Roasted curried cauliflower is a favourite snack and a great addition to salads, too. Although cauliflower often plays second fiddle to broccoli and kale, it’s a nutrition superstar: low in calories (a mere 25 calories per cup), cauliflower contains zero fat, is high in fibre and boasts 77 percent of the daily value for vitamin C (gee, I should really eat it more often . . . ). It’s also a potent liver detoxifier, containing nutrients and compounds that activate Phase 1 and 2 detoxification processes, which keep nasty cancer-causing substances from attacking healthy cells.
So, add a cauliflower to your grocery list, and give this easy dish a try!
- 1 large head cauliflower, chopped into medium-size florets
- Olive oil cooking spray (or 1-2 tsp olive oil)
- 1 Tbs curry powder
- ½ tsp sea salt
- Preheat oven to 425F. Spread cauliflower evenly on large baking sheet. Mist with cooking spray (or toss with oil) and sprinkle with curry powder and salt. Use hands to toss gently to coat.
- Bake 20-30 minutes or until cauliflower is lightly browned and tender. Best served hot, but good at room temperature, too. Serves 4 (or 2 hungry people). (Just a thought, but these would be very tasty served with salsa or Sugar-Free Ketchup!)
