Banana Soft Serve & Berry Sauce

It’s not Ben & Jerry’s, but frozen banana purée is a darn good substitute. Plus a half cup of banana soft serve counts as a serving of fruit and boasts loads of bone-building potassium, all for a fraction of the fat and calories of ice cream or frozen yogurt. Slice and freeze ripe peeled bananas in freezer bags for an easy treat whenever an ice cream craving hits!

Ingredients:

  • 4 large ripe bananas, sliced, peeled and frozen
  • 1 tsp vanilla extract

Directions:

  1. In a food processor, blend banana chunks and  vanilla until smooth (thick soft serve consistency), adding 1 Tbs milk if necessary.
  2. Serve immediately. If desired, top with fruit, nuts, chocolate chips (melt a tablespoon of chocolate chips in the microwave for 30 seconds for a quick chocolate sauce) or berry sauce (recipe below). Makes about 4 cups.

Berry Sauce: In a blender or food processor, add 2 cups fresh or thawed frozen raspberries or strawberries, 1 Tbs lemon or orange juice, 2 Tbs water, and stevia (to taste). Blend until smooth.
